Hand-picked in small boxes. Harvest is cooled in a cold room. Whole bunch pressing.
Vinified in stainless steel thermoregulators. Cold stabilization, settling and start of maintained alcoholic fermentation between 16° and 18°C.
Thermoregulated stainless steel tanks, in barrels 500L for 9 months.
Pale yellow color. The scent is expressive with notes of brioche and slightly buttered. The taste is frank and lively with a beautiful structure in the mouth. We recommend it with grilled fish, white meat or simply aperitif. Serve between 11 and 14°.
