The grapes come from their own vineyards, located in Larraga and Oteiza. The region is known for its mild temperatures and moderate rainfall, ideal for the slow ripening of grapes. These vineyards are rain-fed farms that produce grapes with more aromatic strength.
The grapes are harvested by machine and left in fermentative maceration at a temperature of 10oC to promote the extraction of aromatic compounds. The process of alcoholic fermentation is then started, when lactic bacteria selected to start malolactic fermentation at the same time (co-inoculation) are also inoculated. This new technique is very positive, due to the final aromatic potential provided by a large number of red fruits that retain a high stable colour index. This process produces a softer wine, available immediately after the harvest, thus enhancing the absolute freshness of this wine.
This wine has a medium chromatic layer, with intense purple tones, coming from the careful technique of elaboration. Its nose is characterized by the intensity of the ripe and sweet notes of red fruit, highlighting strawberry and cherry. On the palate, it is a wine with a soft and sweet taste, which gradually fills the mouth, giving rise to a marked fruity aftertaste. This wine can be characterized by being soft and easy to consume.
