The grapes come from their own vineyards in Navarre. Its temperate temperatures and moderate rainfall are ideal for the slow ripening of grapes, which makes an excellent polymerization of phenolic and aromatic compounds.
The harvest takes place at night, completely avoiding the oxidation of the grapes. After cold maceration, fermentation begins by controlling the remontados and delestages, breaking the cap to extract the finest tannins. This wine undergoes malolactic fermentation in co-inoculation with alcoholic fermentation.
The wine is stored in our French oak foudre, where it is aged for fifteen months.
This wine has a high medium layer, maintaining after aging a good color intensity and a beautiful cherry tone. The nose is characterized by the intense aromas of ripe fruit, mainly black fruit (blackberry, cassis and plum). At the start of the palate the result is a structured wine, silky and oily, well polished tannin and marked liquorice flavor, which combines with the roasted and the leather of the wood. The finish is long and persistent.
