The grapes come from their own vineyards located in the middle of Navarre, characterized by temperatures with contrasts between night and day and very moderate rainfall, which favors the phenolic ripening of the grapes.
These grapes have been harvested at night, in order to avoid as much as possible any kind of oxidation. They are properly treated to prevent unwanted macerations and in a matter of hours “bleeding” due to gravity to obtain the best quality “tear” must. The must is cleaned by flotation. The fermentation at very low temperature allows to extract all the good that the fine lees bring, hence its volume in the mouth. All these oenological techniques give rise to the aromatic intensity of this wine, its volume in the mouth and its longevity over time.
The fruit prevails over the varietal character, which is more marked on the palate, resulting in a round, smooth and structured wine.
In sight we have a very bright wine with the typical red colour of the denomination. On the nose it stands out for its aromatic intensity revealing aromas of very ripe red fruits highlighting strawberry and cherry. All this gives it a certain complexity, which together with the persistence in the aftertaste is very pleasant and invites to drink.
