The grapes come from our own vineyards in Tierra Estella. This area is characterized by very mild temperatures and very moderate rainfall, keeping some of the acidity that enhances the freshness and longevity of this wine.
Harvest at night, in order to avoid as much as possible, the oxidation of polyphenols and aromatic precursors of the grapes. After a cold maceration of several days, the fermentation begins, in which it is controlled with special care during the picking up, producing daily the breaking of the cap to extract from the finest tannins that give rise to the structure of this great wine. Malolactic fermentation is done in co-inoculation with alcoholic fermentation.
After that, the wine passes to French oak barrels and finishes its aging up to 12 months.
Wine with a medium-high layer of colour and elegant “Picota” cherry tone. On the nose it stands out for its harmony between fruit and wood, with a predominance of ripe black fruit
