Soil type: Regarding the soil, there are two clearly differentiated areas, the northern area of the plot, which has a soil with a Franco - Sandy characterization (center and bottom of the slope), and the southern area, with a Franco - Arcillosa characterization (Head of the hillside). Both sandy-loam and clay-loam soils are poor soils, with little capacity to retain water and nutrients.
Caudum have been elaborated in a traditional way, the alcoholic fermentation takes place in stainless steel tanks. The malolactic fermentation takes place during the month of December in stainless steel tanks.
The wine is aged in new French oak barrels Allier de Tonnellerie Radoux for a period of 12 months. It is bottled on the property. It has not been filtered or clarified.
Good aromatic intensity, with spicy notes from oak aging its careful, well linked with memories of ripe red fruits. The palate is friendly to entry, with medium body, good balance between fruit and wood tannins and aftertaste which include notes of red fruits with spicy.
