- Grape variety: 100% Airén - Vineyard: Planted ungrafted in 1935 on the “Villalobillos” family estate in Corral de Almaguer. Cultivated without irrigation in limestone-rich soil - Harvest: Manual, in late September
- Preparation: Destemmed and gently pressed to obtain only the free-run juice, finished with static racking - Fermentation: Cold at 14ºC in stainless steel tanks for 4 weeks
- Colour: Straw yellow - Bouquet: Scents of apple and fennel seasoned with a rustic twist, a true reflection of what this ungrafted vineyard has to offer - Palate: Flavourful. Lively acidity, and an aftertaste suggesting bitterness that invites another sip. Sincere at first taste, initially delicate, before growing more insistent and unctuous over the palate, giving a powerful and persistent finish that demonstrates the potential of the airén grape when the yield is fitting for the varietal - Serve at: 6-8ºC
