- Grape variety: 100% Airén - Vineyard: Planted ungrafted in 1935 on the “Villalobillos” family estate in Corral de Almaguer. Cultivated without irrigation in limestone-rich soil - Harvest: Manual, in late September
- Preparation: Destemmed and gently pressed to obtain only the free-run juice, finished with static racking - Fermentation: In used French oak barrels
Once the fermentation is finished, it remains in the barrel for 12 months with weekly batonages for the first 6 months. It is subsequently transferred to a stainless steel tanks where it is clarified
- Colour: Golden yellow - Bouquet: Intense in aromas, among which those of its fermentation and aging in barrels stand out. It begins showing the aromas of coconut and vanilla, to continue with those of spices and fine herbs - Palate: On the palate the volume of lees work is well balanced with a well-managed acidity. Tasty, lively and broad in the aftertaste with a salty hint that makes it very interesting
