Harvest by hand in 20 kg. boxes. Old-fashioned winemaking in the Toro area, whole bunches, without destemming or crushing. During 21 days the clusters are pressed little by little to extract the must. Maceration and fermentation very slow and long of 3 weeks. After this time the wine is pressed with a vertical press. Placed in new French oak barrels for malo-lactic fermentation and remained in the 400 litre barrels for 36 months, without racking. Removed from the barrel and left in the tank for 10 days to allow all the sediment to settle, and bottled directly without clarification.
