Vinification
Pressing at the property. Alcoholic fermentation at low temperature by thermoregulation. Racking and filtration. Second fermentation in bottle: we add the tirage liqueur and the bottles stay laid on laths for a minimum of 24 months ageing in our tuffeau cellar. Riddling and ice disgorging step.
Tasting notes
Color: Nice salmon rose robe with orange reflects and fine bubbles. Bouquet: Aromas of red fruits and citrus. Palate: This wine has a full structure in the palate with a ripe and tangy aromatic persistence. This traditional cuvée will be ideal on its own as an aperitif or served with a dessert such as fruits pie or fruits salad.
