Clay-limestone, on the surface a mixture of pebbles and clay on limestone rock. Sloping and south-facing vineyards, warm and sunny microclimate. The climates are: "Vauxmuriens", "La Vache" and "Rugiens" village. Average age - 50 years, 10,000 vines/ha. Yield - 35 hl/ha.
Whole grapes sorted without SO2 with punching down twice a day for 3 weeks. Alcoholic fermentation with indigenous yeasts without artificial thermoregulation. Malolactic fermentation in pieces.
On the lees, maturing called "in reduction" without racking, with stirring without SO2 for 16 months, followed by maturing in tuns for 2 months.
Refined and fleshy wine. It is spicy, with notes of musky fruits (wild strawberries, blackberries) and cedar wood. It is a seductive and deep wine.
