Red

Description

Viticulture

Clay-limestone; soil with a sandy and ferric characteristic. It is a sunny and airy microclimate, exposed to the South-East, which comes from the "Clos St Denis". Average age - 45 years, 10,000 vines/ha. Yield - 33 hl/ha.

Vinification

Whole grapes sorted without SO2 with punching down twice a day for 3 weeks. Alcoholic fermentation with indigenous yeasts without artificial thermoregulation. Malolactic fermentation in pieces.

Wine aging

On the lees, maturing called "in reduction" without racking, with riddling without SO2 for 17 months.

Tasting notes

A silken glove with an iron handle: this powerful and refined wine has energy. Its fruity (blackberry, raspberry), floral (rosehip, iris), reseda and sandalwood aromas give it deep complexity.
