In the manufacture of wine used noble mold affected grape varieties Sémillon, Sauvignon Blanc and Muscadelle, grown in the Sauternes appellation in organic vineyards. Harvested by hand from vines that are over 40 years old and have very limited yields.
The juice obtained after pressing the grapes under the influence of gravity falls into a large tank, where it settles at a temperature of about 15 ºC. The next day, fermentation begins along with the skins. In the middle of fermentation, the must is transferred to French oak barrels, where fermentation ends at a temperature of 20 ºC.
To age the wine on the lees, French oak barrels are used, a third of which are new. Ripening lasts from 18 to 20 months.
The wine will be perfectly stored until 2040.
Wine of bright golden yellow color. The taste of wines is juicy, perfectly balanced, full-bodied, rich, with good acidity, many spicy notes, hints of toasted caramel, lime, pineapple, peach, mango, mint, nuances of wild flowers and white pepper. The finish is very long, elegant. Aroma complex, creamy aroma of wine, with excellent intensity, reveals notes of orange peel, apricot and rich caramel hues.
