Harvest - from September 20 to October 12.
The grapes to create Chateau Cheval Blanc are harvested by hand, subjecting it to double selection. This is followed by alcoholic fermentation, which is carried out in stainless steel and concrete vats, with grapes from different areas fermented separately. Next, pressing takes place using a hydraulic press.
In new oak barrels for 18 months.
The initially restrained nose reveals complex aromas very quickly. A palette of red and black fruits such as cherries, raspberries, blackberries and blackcurrants dominates. In addition, there are abundant floral notes of violet, rose, lily and peony. As the wine gradually opens up, it reveals almost caramelized notes of pepper and spices. Lively and clean nose. The attack is creamy and full-bodied, moving into the middle of the palate with powerful rounded tannins, rich and elegant, voluminous and refined. The balance between tannins and acidity gives the wine freshness and fruitiness, as well as a very long finish. The intensity of the aroma of this Cheval Blanc is impressive.
