Viticulture
Limestone - well-drained; poor fertility soil. Average age of vines-20 years. Vine training system-Simple Guyot. Planting density- 3600 plants per hectare. Yield- 45 hectolitres / hectare. Harvest- manually, in small crates.. First check on vine before picking. Harvest stored in a cold room before placing on manual sorting table.
Vinification
In batches, in temperature-controlled stainless steel tanks. Constant cold stabulation after pressing, then settling and alcoholic fermentation under controlled temperatures. Blending after élevage (i.e., through techniques such as filtering and fining)

Temperature-controlled stainless steel tanks.
Vintage details
Pale gold. Aromas of green apples and lemons. On the palate, hints of citrus, pink grape- fruit and orange blossom add vibrancy, zestiness. Have as an aperitif or an accompaniment to Mediter- ranean fish and poultry dishes.
