Harvest - from September 6 to September 28.
Grapes to create wine "Chateau Cheval Blanc" are harvested by hand, subjecting it to double selection. This is followed by alcoholic fermentation, which is carried out in stainless steel and concrete vats, with grapes from different areas fermented separately. Next, pressing takes place using a hydraulic press.
In new oak barrels for 18 months.
This elegant, delicate wine promises to become a great classic. The color is deep red and the nose is complex from the start, expressing floral (violet and peony) aspects that give way to attractive aromas of red fruit, raspberry and black cherry. This vintage shines with its aromatic freshness and precision. It starts off very full-bodied on the palate. The middle palate is quite full, rich and voluptuous, and the aftertaste is endless. The tannins are smooth, silky and elegant, and the overall wine is perfectly balanced with lovely fresh fruit on the finish. 2011 Château Cheval Blanc has an extremely promising future.
