Sanforte is harvested in September when the grapes reach an ideal equilibrium between maturity and acidity to best express its unique characteristics. Nearly all the grapes come from the old vineyard more than 60 years old.
Sanforte is vinified in a completely natural way in small open containers (called “mastelle”) with manual pressing of the cap. In this way, the phenols, taste and color are extracted delicately. Sanforte is fermented without enological additives, neither selected yeasts nor sulfites. Malolactic fermentation, occurs in oak barriques of 2°, 3° and 4° passage.
It matures for about 12-18 months before bottling. It depends on the vintage.
Refined and nuanced, it has the aroma of sour cherry, cherry stone, dark plum, black pepper, delicate notes of coffee and chocolate. Its silky texture, smooth tannins and perfect balance brings you to a unique enogastronomic adventure.
