Picking of Sangiovese and other local grape varieties for our Chianti DOCG starts in the first half of September. The harvest is done by hand.
The alcoholic and malolactic fermentations occur in cement tanks, without the addition of selected yeasts or enological additives, except a small amount of sulfites when it's needed. Maturation process goes in cement and stainless steel for about 6-8 months, and then several months in the bottle before release.
The wine displays aroma of red cherry, red plum, cranberry and other red fruits, roasted tomato, oregano, thyme and violets.
