Vinification
Harvest by hand. Pressing at the property. Alcoholic fermentation at low temperature by thermoregulation. Racking and filtration. Second fermentation in bottle: we add the tirage liqueur and the bottles stay laid on laths for a minimum of 12 months ageing in our tuffeau cellar. Riddling and ice disgorging step.
Tasting notes
Color: A beautiful shiny and crystal clear golden color, with fine bubbles. Bouquet: The bouquet is rich, intense and floral with white fruits notes. Palate: Fine bubbles with a pleasant freshness on the palate. This traditional cuvée will be ideal on its own as an aperitif or served with sea food, fish or any kind of dessert.
