Culture Sustainable viticulture (Terra Vitis). Ground/terroir: sand and silt. Harvest: September 2017.
Hand-picked beginning of September 2017, pneumatic pressing – (3h 30-4h), traditional fermentation with malolactic fermentation (half the volume in stainless steel tanks, the other half in old oak foudres), ageing on lees until spring 2018. Bottling in spring 2018; second fermentation in the bottle; 30 months on laths before disgorging. No dosage at the disgorgement.
Ageing capacity: 5 to 7 years (with optimal conditions).
This white Crémant d’Alsace has been produced with Pinot (white Pinot for the freshness, Pinot Auxerrois for the softness) and a touch of Riesling for the finesse. The blend of these 3 grapes gives a nice balance between fruit and freshness. The bubbles stay very fine. Despite the non-dosage, it has a nice and round body brought by the maturity of the grapes. Its fine bubbles will bring celebration to the aperitif and help all the festive moment sparkling. It is the ideal companion for the aperitif in all seasons. It matches with elegance on very rich cheeses (Brillat Savarin for example) with brioche-style bread; or with smoked salmons... or just with small gourmet canapes.
