Grapes vinified separately in thermo-regulated stainless steel vats. Cold stabulation followed by settling, then alcoholic fermentation maintained between 16° and 18°C.
8 months in 500-litre oak barrels.
On the palate, fresh floral and citrus notes keep the tension throughout, and there is a round and delicate finish. Lovely with white fish tartare and citrus zest.
The 2016 Languedoc Blanc Songe d'Éocène is a blend of 70% Roussanne, 20% Bourboulenc and 10% Viognier, made in 500-liter barrels like the other whites at this estate. Honey, banana and pineapple notes are a bit overbearing on the nose, but this medium to full-bodied white is balanced on the palate, adding some chalky notes and finishing long and dry. Joe Czerwinski
