The climate of the entire region is very suitable for the ripening of the grapes, with cold temperatures in winter and warm temperatures in summer. The soils are very poor, limestone with an abundance of boulders and very low yield.
We collect the grapes at night so that they arrive cold and we make them using the traditional bleeding method, so classic in Navarra. We obtain a small quantity of a powerful and colorful must that we call tears. Once cold fermented, we obtain a very aromatic, fruity and very smooth rosé, with an almost sweet and very tasty finish.
