Low yields from vines more than 25 years and classical system goblet. Soils of great wine, deep, well-drained stony located between 525 and 600 meters. Vineyards protected by the "Biosphere Reserve" by UNESCO in 2003.
Traditional system of carbonic maceration. Fermentation of the whole clusters, without removing the stems, harvested by hand and with excellent health, in an underground and sealed stainless steel tank. Due to the weight and handling of the bunches, part of the grape grains break, starting the alcoholic fermentation. The CO2 produced displaces the O2, achieving an oxygen-free atmosphere, starting an internal (intracellular) fermentation in each intact grape berry. When the concentration of alcohol inside the grain reaches about 2º, the grain breaks. In the presence of skins, the alcoholic fermentation continues until all the sugars are transformed into alcohol and CO2.
2021 Very good. Harvested in October, the grape entered the winery healthy and with very good parameters.
A very versatile and easy to enjoy wine due to its good texture in the mouth. Ideal for sausages, legumes, vegetables, pasta, white meats and cheeses.
