The Domaine Clef de St Thomas, 11 hectares, is made up of different plots planted to the north of Châteauneuf-du-Pape and also to the south of the Village. This cuvée is a plot selection on the south of the village of old vines: stony plateau, sandstone soils and pebbles from the « Serres », for a very Châteauneuf typicity!
The grapes are fully destemmed and then fermented in stainless-steel vats before vinification at 25°C, followed by 12 months’ maturation in French oak barrels (60% used, 40% new).
Colour: Garnet Nose: Exotic wood (cedar), raspberry, spices Taste: Fleshy, mature, mild tannins. Very elegant with truffel and woody notes.
