On a stainless steel tank. It is a blend of the wine made in the year of the harvest with reserve wines kept on lees, in pure cuvee. The malolactic fermentation is done. It reaches its fullness after about 25 months of ageing in the cellar
SIGHT: A very light yellow color with citrus reflections : brilliant and crystalline. NOSE: Very delicate and fresh smell, with fresh citrus flavours (grapefruit and lemon) and a scent of white flowers (honeysuckle). As the wine aerates we can feel hints of fleshy fruits (apple and pear). PALATE: A spicy and alive taste with a continuous and regular freshness. It is complete and slightly bitter at the end, making us think of the taste of grapefruits. FOOD PAIRING: A complete and fresh champagne that can be served as an appetizer or during the meal. Best pair: veal rice, white meat in sauce or poultry.
