Description

Viticulture

Average age of vines: 25 years. Vine formation system: double guyot. Yield: 40 hl/ha. The soils are well-drained, consisting of a meter layer of gravel on top of sandstone. In the vineyards prudent viticulture is practiced, i.e. chemicals are used only in extreme cases.

Vinification

The grapes are harvested by hand from the first half of September to mid-October in small baskets for better transportation to the winery. Grape sorting is carried out both in the vineyards and at the winery. After cold maceration, fermentation is carried out, which takes place at a temperature of 30 ° C - 32 ° C for three weeks. Before bottling, the wine is clarified with egg white.

Wine aging

For 16-20 months in oak barrels, 50% of which are new.

Tasting notes

The wine has an intense plum-ruby color with a slight purple hue. Shades of coal, earth and plum are perfectly expressed.
