The story goes that the famous "Calissons of Aix”, were born on the hillside of Calissanne, once planted with almond trees. Nowadays, it is the vine, but also the olive trees that are the hallmark of this vast property dotted with Mediterranean trees - natural shelter for wild fauna of partridges and wild boars.
Harvest is carried out at the end of August on the older plots of the estate. The juices are gently extracted away from oxygen through a from press of the latest technology. After settling for several weeks, the winemaking takes place at 15oC in temperature-controlled vats.
