Vinification occurs in steel tanks for a single vintage with the addition of 20% "vin de réserve perpétuelle", followed by ageing on its own yeasts for over 48 months before the final dosage is added
Aging: average annual temperature of 10-11° Aged on laths in the cellar - 48 months minimum.
The Champagne is decidedly golden; the nose reveals white fruit, flowers and subtle pastry notes. On the palate it is gastronomic and mineral with the elegant finesse of a mature Chardonnay.
