This fruit comes from 20 years old Pinot Noir vines without rootstock. The fruit is selected by hand on March 15 and the whole cluster goes to the press where only the must from the first drain is used. Fermentation takes place at low temperature in stainless steel tanks. Before drying, the must is transferred to a bottle where it is closed with a crown cap and its fermentation ends to create the bubbles. Ancestral method, unfiltered, without the addition of sulfites or added sugar.
Aging potential: For immediately drinking.
